This class covers the essentials, like what to look for when purchasing your
protein, fire management and pit/smoker temperatures, trimming and prep, rubs,
injections, wood smoke profiles, meat temperatures, timing, slicing, and serving.
What’s the Point?
Great question, and one of many that will be answered in class. Besides learning your
way around a brisket (the “point” of a brisket is opposite the “flat” also known as the
“Burnt End”). It’s important to know what to expect as the process of smoking a brisket
progresses. Things like what to watch for, pushing through the “stall”, when to wrap (or
not), and when your brisket is perfectly done.
We will cover everything from prep, injections, rubs, finish temps and tenderness, wood
selection and fire management. So the point is, join our class and make some great
friends while you learn to make some great brisket.
Things you need to know about the class:
• Prepare to have good time.
• We said you are involved in every step of the process. Class is on 6/24/23 at 4pm ends when
the Brisket is done off the smoker.

• We have everything you need – The Brisket, trimming and slicing knifes, injector, rubs (your choice of 2), thermometer
including notepaper and pens.
• Unlike most classes offered in this field, you are completing each step from start to finish.
• All ticket sales are valid for the specified time and date only.
• Cancellations/Refunds require a 30 day notice.
• We reserve the right to make any changes to class dates, times, or locations due to uncontrollable
circumstance.
